HOW GUMMY BEARS ARE PRODUCED?

Form for the gummies is created in the beginning as a plaster model, which becomes a production form of the whole series of gummies. The stamps are usually pressed by machines into trays with a corn starch.

Ingredients of gummies are heated and mixed, till a homogeneous mass is formed. Then, natural aromas and dyes are added. At the last end, vegetable oil and citric acid are added. After mixing all ingredients, mass is squeezed through a mold dispenser to forms. Gummies need to dry, which usually takes several days. After that, gummies are cleaned and covered with carnauba wax to prevent them from sticking and to give them shining effect.

WHAT FREEZE DRYING IS?

Freeze drying is a process where food is drying through the freezing it, in a temperature lower than 40 Celsius degrees. By that, fruits and vegetables, preserve their nutrients, natural appearance, taste and smell. This is why, during the drying under the atmospheric pressure, it comes to sublimation of ice, which means that almost all the water is removed, excluding condensation. It is safe way of processing food, because in a freeze dried process, none bacteries, mould or other pathogenic germs can survive.
